About our B-Sides Project

We are very excited to release the first round of beers in the B-Sides, a series over three years in the making.

All of the beers in this series are blended, barrel-aged beers. Many of them are sour, or at least have an increased level of acidity and tartness. All of them use some sort of non-traditional yeast, like Brettanomyces to add uncommon, funky flavors that add tremendous levels of nuance and depth to the beers. Additionally some of the beers have noticeable “wood character” either from neutral oak, Pinot Noir, oak-aged gin, or Bourbon.

Unlike many of the other sour beers we make, these beers require at least 9 months, if not longer, to make. In the case of the first 8 beers in the B-Sides series, the beer in some of the blends is over 3 years old, and the average “age” of each beer is about 20 months. What’s more is that each of these beers is the result of a complex blending process: rather than brewing and packaging a single batch of beer, the beers in this series are designed “after the fact” where we pull from multiple sources and barrels to create unique new beers.

For us, these beers are labors of love. Blended wood-aged wild and sour beers are not what “keep the lights on” for us as a business. We are motivated to make these beers because we find them challenging, beguiling, and complex. We love bringing beers together in exciting and uncommon ways. Since we opened our Production Brewery in 2013, we have aged beer in oak-barrels, and it has taken us that long to build up the stock of aged beer for blending that was required for this type of project. We think that you’ll find that this process of brewing base beers, aging the beers in different vessels and with different microorganisms, and blending them together to hit a particular final collage of flavors is worth the patience and effort.
