Fresh Hop Citra IPA: it’s almost time for Fresh Hop season, and this year we are making one fresh hop beer. an amped-up version of our IPA conditioned on ‘wet’ Citra hops, this beer also incorporates some experimental hopping techniques to maximize the flavor of every brewer’s favorite green weed.
Sour Honey Ale: another iteration in our experimentation with lactic fermentation and blending of sour and non-sour beers. this copper ale is made with Canadian honey malt, flavorful wildfire honey, and black mission figs. 50% of the beer is is fermented solely by Lactobacillus, while the remaining 50% undergoes a mixed culture fermentation with traditional brewer’s yeast and lactic acid bacteria.
Birra Minestra: our annual tribute to end-of-summer bounty, this is a golden ale fermented with Oregon basil, sungold tomatoes, and pluots.
Hopfenbier: an “international IPA” made with German malts, as well as hops from Europe and New Zealand.
